Blueberry Galette
VEGAN/REFINED SUGAR FREE

Ingredients
- 1 1/2 cup flour
- A pinch of salt
- 1/2 cup melted coconut oil
- 3-5 tbsp cold water
- 2 1/2 cup blueberrys
- 1 tsp cornstarch
- 2 tbsp date sugar
Instructions
- First line a baking pan with parchment paper and preheat the oven to 400F
- In a bowl combine the flour, salt, and oil, mix till incorporated and then splash in the cold water tbsp by tbsp till the dough is well held together (add more tbsp of water if the dough is too crumbly)
- Next roll out the dough into a ball and flatten down into a circle shaping the sides. After cover with plastic wrap and place in the fridge to sit for about 15 min so the dough won’t crumble when the filling is added
- In a bowl combine the blueberrys, cornstarch, and sugar
- Take the dough out of the fridge and add the blueberry filling, wrapping in the edges
- Put the galette on the baking pan and place in the preheated oven to bake for about 35 min until the crust turns golden brown
