Lavender Lemon White Chocolate Cookies
VEGAN/REFINED SUGAR FREE

Ingredients
- 1 cup vegan butter
- 1/2 cup monk fruit sugar
- 2 cups flour
- 1 tbsp lemon zest+1 tsp lavender
- 1 tsp lemon extract
- 1 cup melted vegan chocolate
- 1 tbsp lavender
Instructions
- Preheat the oven to 350F and line a baking pan with parchment paper
- Beat the butter and monk fruit till it turns into a soft cream
- Mix in the flour, lemon zest, and lavender and roll into a ball wrapping it with plastic wrap and place in the fridge for half an hour
- Roll the dough out once it has sat, and using a cookie cutter cut out pieces laying them out separated on the baking pan and bake for about 15 minutes till lightly brown
- While letting the cookies cool, melt down the chocolate and mix in the lavender letting it infuse for about 5-10 min then straining out the lavender pieces
- Using a butter knife spread the lavender white chocolate on the cooled cookies and sprinkle with lavender
