Lavender Lemon White Chocolate Cookies

VEGAN/REFINED SUGAR FREE

Ingredients

  • 1 cup vegan butter
  • 1/2 cup monk fruit sugar
  • 2 cups flour
  • 1 tbsp lemon zest+1 tsp lavender
  • 1 tsp lemon extract
  • 1 cup melted vegan chocolate
  • 1 tbsp lavender

Instructions

  1. Preheat the oven to 350F and line a baking pan with parchment paper
  2. Beat the butter and monk fruit till it turns into a soft cream
  3. Mix in the flour, lemon zest, and lavender and roll into a ball wrapping it with plastic wrap and place in the fridge for half an hour
  4. Roll the dough out once it has sat, and using a cookie cutter cut out pieces laying them out separated on the baking pan and bake for about 15 minutes till lightly brown
  5. While letting the cookies cool, melt down the chocolate and mix in the lavender letting it infuse for about 5-10 min then straining out the lavender pieces
  6. Using a butter knife spread the lavender white chocolate on the cooled cookies and sprinkle with lavender
