Summer Rolls & Peanut Butter Sauce

VEGAN/GLUTEN-FREE/REFINED SUGAR FREE

Ingredients

  • 5 sheets of rice paper
  • 1 1/2 cup vermicelli noodles
  • 1 avocado
  • 1/3 cup edamame
  • 3/4 cup parsley
  • 1 cup thinly sliced carrots
  • 1/3 cup peanut butter
  • 1 tsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp chili flakes

Instructions

  1. Slice the vegetables and cook the vermicelli by instructions
  2. Soak the rice paper in water and place on a wooden cutting board evenly place 1/5 of the vermicelli, avocado, edamame, parsley, and carrots, folding in the edges till the ingredients are all tightly packed into a roll
  3. Repeat the steps till all the ingredients are used then set aside
  4. In a bowl combine the peanut butter, soy sauce, vinegar, and chili, then stir till a sauce is made
  5. Serve the rolls with the sauce and enjoy!
