Summer Rolls & Peanut Butter Sauce
VEGAN/GLUTEN-FREE/REFINED SUGAR FREE

Ingredients
- 5 sheets of rice paper
- 1 1/2 cup vermicelli noodles
- 1 avocado
- 1/3 cup edamame
- 3/4 cup parsley
- 1 cup thinly sliced carrots
- 1/3 cup peanut butter
- 1 tsp soy sauce
- 1 tbsp rice vinegar
- 1 tsp chili flakes
Instructions
- Slice the vegetables and cook the vermicelli by instructions
- Soak the rice paper in water and place on a wooden cutting board evenly place 1/5 of the vermicelli, avocado, edamame, parsley, and carrots, folding in the edges till the ingredients are all tightly packed into a roll
- Repeat the steps till all the ingredients are used then set aside
- In a bowl combine the peanut butter, soy sauce, vinegar, and chili, then stir till a sauce is made
- Serve the rolls with the sauce and enjoy!
