Stir Fry Udon Noodles

VEGAN/REFINED SUGAR FREE

Ingredients

  • 1 pack udon noodles (200g)
  • 1/2 cup mixed frozen veggies (corn, carrots, and green beans)
  • 1/4 tsp chili flakes
  • 1 clove of garlic (shredded)
  • 1 tsp ginger (shredded)
  • 2 tbsp soy sauce
  • 1 tsp rice vinegar
  • 2 tbsp toasted sesame oil
  • 2 tbsp peanut butter
  • A pinch of salt

Instructions

  1. Cook udon noodles according to package instructions
  2. To a frying pan on a medium heat combine the frozen veggies, chili flakes, garlic, and ginger and mix till incorporated and frying
  3. Once the noodles are cooked add to the frying pan and toss till it has evenly been coated with the other ingredients
  4. Turn off heat and mix in the soy sauce, vinegar, sesame oil, salt, and peanut butter, then enjoy!
