Stir Fry Udon Noodles
VEGAN/REFINED SUGAR FREE

Ingredients
- 1 pack udon noodles (200g)
- 1/2 cup mixed frozen veggies (corn, carrots, and green beans)
- 1/4 tsp chili flakes
- 1 clove of garlic (shredded)
- 1 tsp ginger (shredded)
- 2 tbsp soy sauce
- 1 tsp rice vinegar
- 2 tbsp toasted sesame oil
- 2 tbsp peanut butter
- A pinch of salt
Instructions
- Cook udon noodles according to package instructions
- To a frying pan on a medium heat combine the frozen veggies, chili flakes, garlic, and ginger and mix till incorporated and frying
- Once the noodles are cooked add to the frying pan and toss till it has evenly been coated with the other ingredients
- Turn off heat and mix in the soy sauce, vinegar, sesame oil, salt, and peanut butter, then enjoy!
