Blueberry Scones

VEGAN/GLUTEN-FREE/REFINED SUGAR FREE

Ingredients

Scones

  • 1/3 cup dairy-free milk
  • 1 tsp apple cider vinegar
  • 1 cup oats
  • 1 1/2 cup oat flour
  • 1/2 cup monk fruit sugar
  • 1 1/2 tsp baking powder
  • 1/2 cup melted coconut oil
  • 2 tbsp applesauce
  • 1 tsp vanilla extract
  • 1/2 cup blueberries

Glaze

  • 1/2 cup powdered monk fruit sugar
  • 2 tbsp dairy-free milk

Instructions

  1. To start off preheat the oven to 420 F and line a baking pan with parchment paper
  2. In a small bowl mix together the apple cider and milk then set aside
  3. Then in a large bowl whisk together all the dry ingredients then add to the milk mixture the applesauce, coconut oil, and vanilla extract then pour over the dry ingredients
  4. Once the mixture forms into a dough roll out and cut into circles using a cookie cutter or shaping with hands placing onto the parchment paper and baking for half an hour
  5. While the scones are baking whisk together the powdered sugar and milk till an glaze forms
  6. Let the scones cool once baked and drizzle with the glaze
