Blueberry Scones
VEGAN/GLUTEN-FREE/REFINED SUGAR FREE

Ingredients
Scones
- 1/3 cup dairy-free milk
- 1 tsp apple cider vinegar
- 1 cup oats
- 1 1/2 cup oat flour
- 1/2 cup monk fruit sugar
- 1 1/2 tsp baking powder
- 1/2 cup melted coconut oil
- 2 tbsp applesauce
- 1 tsp vanilla extract
- 1/2 cup blueberries
Glaze
- 1/2 cup powdered monk fruit sugar
- 2 tbsp dairy-free milk
Instructions
- To start off preheat the oven to 420 F and line a baking pan with parchment paper
- In a small bowl mix together the apple cider and milk then set aside
- Then in a large bowl whisk together all the dry ingredients then add to the milk mixture the applesauce, coconut oil, and vanilla extract then pour over the dry ingredients
- Once the mixture forms into a dough roll out and cut into circles using a cookie cutter or shaping with hands placing onto the parchment paper and baking for half an hour
- While the scones are baking whisk together the powdered sugar and milk till an glaze forms
- Let the scones cool once baked and drizzle with the glaze
