Pumpkin Spice Doughnuts

VEGAN/GLUTEN-FREE/REFINED SUGAR FREE

Ingredients

  • 1/4 cup melted coconut oil
  • 1/3 cup date sugar
  • 1/2 cup pumpkin puree
  • 1/3 cup dairy-free milk
  • 1 tsp apple cider vinegar
  • 1 cup oat flour
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • A pinch of salt
  • 1/2 cup monk fruit powdered sugar
  • 1 tbsp melted vegan butter
  • 1 tsp cinnamon

Instructions

  1. Prepare doughnut molds and preheat the oven to 375F
  2. Add milk and apple cider then add in a separate bowl the oil, sugar, and puree. Pour the milk mixture over the oil one
  3. In another bowl mix together the flour and baking powder and combine into the wet ingredients
  4. Pour into the doughnut molds and bake for 10 min till toothpick comes out clean and wait a couple minutes till the pan cools before removing the doughnuts to prevent it from crumbling
  5. While the doughnuts are baking beat the powdered sugar, butter, and cinnamon till the glaze is formed
  6. Dip the doughnuts in the glaze and enjoy!
