Blueberry Lemon Pancakes

VEGAN/GLUTEN FREE/REFINED SUGAR FREE

Ingredients

  • 1 cup oat flour
  • 2 tsp baking powder
  • 2 tbsp lemon zest
  • A pinch of salt
  • 1/2 cup blueberrys
  • 1/4 cup applesauce
  • 1/4 cup agave syrup
  • 1 cup dairy-free milk

Instructions

  1. In a large bowl mix together the oat flour, baking powder, lemon zest, and salt
  2. in a separate bowl combine the agave syrup, applesauce, and dairy free milk. Pour over the dry ingredients and mix till combined adding more milk if too dry then slowly folding in the blueberrys
  3. Prepare a frying pan placing it over a medium heat poring the batter (about 1/2 cup per pancake) on the pan turning over once it starts to bubble repeating the process
